Carrot Maple Walnut Salad recipe

There are just five ingredients in this delightful Carrot and Maple Walnut Salad recipe, making it quick to prepare but totally delicious to eat! This makes a great choice for a kid’s lunch box or any portable meal.

1 1/4 cups grated carrots
1/2 cup chopped walnuts
1/3 cup raisins
2 tablespoons maple syrup  (grade B or C)
1/4 teaspoon sea salt

1. Put all of the ingredients in a medium bowl and stir gently until well-combined

2. Refrigerate for 2-4 hours.

3. Serve chilled

  1. This is a delicious healthy recipe that is so quick and easy to make. I still use my old (I mean really old, like 35-40 years old) Salad Shooter to grate the carrots. You don’t need fancy expensive equipment to make this. Sometimes, rather than get out the food processor (which is quite heavy) I put the amount of walnuts needs in a plastic bag on top of a towel and with the side of the hammer hit the bag of nuts a few times and viola you’ve got chopped nuts. I reduced the amount of salt and most of the time use a delicious salt substitute.
