SWEET POTATO SURPRISE

My husband’s family owns an inn on the Kaibab Plateau in northern Arizona, and for the past couple of years we’ve had the unique opportunity of spending the Thanksgiving holiday among lots of relatives within the comforts of a hotel – complete with food to die for! One recipe they served that I will never forget (I’m not a recipe gatherer but I wasted no time asking for this one) is so delicious and amazingly simple – and this side dish also looks a bit like baby food, which meant a lot of people were passing it up (which is OK – more for me!) This one is likely to become a family favorite. You might need to coax picky eaters into trying it the first time, but they’ll be glad you did!

Ingredients:

6 to 8 sweet potatoes or yams (or a combination), peeled

2 packages cream cheese or Neufchatel, softened

Salt and pepper to taste

Directions:

Boil sweet potatoes/yams in a large pot until they are soft enough to be mashed easily. Drain off most of the water, leaving 1 to 2 inches in the bottom. Mash sweet potatoes/yams thoroughly with a potato masher (sweet potatoes/yams will still be hot) until the mixture is free of lumps. Add cream cheese or Neufchatel and mix it in completely (an electric mixer can be used). Mixture should be creamy and of a whipped consistency. Add salt and pepper to taste. Serve warm.

PUMPKIN UPSIDE-DOWN CAKE

 

Line 9×13 pan with wax paper.

 

In mixing bowl, combine:

1 cup sugar
3 eggs
1 large can (29 ounces) Libby’s pumpkin
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1 can (12 ounces) evaporated milk

 

Pour pumpkin mixture in cake pan.

 

Final Ingredients:

1 box cake mix (yellow, white or spice)
Nuts
1 cube butter

 

Sprinkle cake mix on top of pumpkin mixture. Sprinkle nuts (I prefer walnut gems) on top. Drizzle melted butter on top.

Bake at 350 degrees for 50-60 minutes. Cool and turn upside down on rectangular cake platter. Remove wax paper. Cover and refrigerate.

When completely cool, spread Cool Whip on top.
