Farm to Fork dinner Red Acre FarmJoin Red Acre Farm and USU Extension Sustainability this Saturday, Sept. 26, as they collaborate with local chefs Andrew Nehrenz and Michel Attali of The French Spot, a small authentic French Cafe in Cedar City, to offer the Farm to Fork dinner, a delicious feast in celebration of the fall bounty.

Attendees of the Farm to Fork dinner event will start the evening with a farm tour at 5 p.m., getting to know the farmers and fields that helped grow the dinner, which will start at 6 p.m. and last until 8 p.m.

The Farm to Fork dinner at Red Acre Farm is a collaboration with Utah Farm-Chef-Fork, a statewide program connecting farmers to chefs in an effort to enhance Utah’s small-scale and diversified farmers. Utah Farm-Chef-Fork’s goal is to enhance community vitality and reduce miles that food has to travel by connecting Utah producers with Utah restaurants. First conceived in 2012 and funded by the Utah Department of Agriculture and Food Specialty Crop, it is a collaboration between the USDA, Utah State University Extension Sustainability, and Slow Food Utah. Proceeds will benefit Slow Food Utah’s micro-grant program, which in turn benefits Utah’s local food movement.

Roslynn Brain developed and launched USU Extension Sustainability, a set of tools and information designed to assist the general public in engaging in sustainable behaviors. Brain is an assistant professor in sustainable communities at USU. She uses conservation theory, communication techniques, and social marketing tools to foster a broad spectrum of environmentally helpful and responsible behaviors with a focus on waste reduction and local food movements. She also teaches communicating sustainability at USU, helps coordinate the University’s annual Earth Week, launched Utah Farm-Chef-Fork, and designed and co-teaches summer sustainability camps for kids in Utah.
