Breakfast Tofu Scramble

Yes! Soy is healthy (organic, non GMO).  This tofu scramble is quick and easy to make and a great way to introduce tofu as a meat alternate and a good source of protein and calcium! Enjoy it with any meal.

14-16 ounces tofu, extra firm (light or low-fat when possible)
1 clove garlic, minced
1/2 cup onion, diced
1/2 cup green pepper, diced
1/2 cup red pepper, diced
3/4 cup mushrooms, chopped
1/4 tsp turmeric powder
1 tsp cumin powder
3/4 tsp black pepper
1 tsp salt (Black Salt Powder – this gives the egg smell and taste – optional)
Whole grain bread or corn tortilla – optional

1. Add 1/4 cup water to large sauté pan. Once heated, add onion.

2. When the aroma releases from the onion and it starts to become translucent, add garlic.

3. Cook for 2 minutes, add peppers and mushrooms and add 1/4 cup water to assist with sauteing.

4. Cook for about 4 minutes or until vegetables are tender.  While vegetable are cooking rinse tofu and cut in small pieces or for more “egg scramble-look” squeeze and rub it in your hands to break it up into small chunks. Add tofu and turmeric and mix well. Add cumin powder, pepper, and salt, and cook for another 4-6 minutes until everything is cooked through.

5. Serve with whole grain toast or on a warm corn tortilla.  Can also be served on a plate with hash browns cooked on a nonstick grill without any oils.

Nutrition (per serving): 121 calories, 5.3g total fat, 594mg sodium, 10.6g carbohydrates, 4.7g fiber, 2.8g sugar, 10.4g protein.

Tips
This is the basic recipe for tofu scramble, but you can experiment with making it your own. Add tomatoes for a little citrus boost and that lycopene that enhances prostate cancer healing. Swap out turmeric for oregano and rosemary. Use that leftover celery you have wilting in your fridge-the possibilities are endless!
