CasaBlanca Resort & Casino in Mesquite has unveiled two new restaurants, bringing fresh flavors and fun to the popular getaway. On August 25, crowds gathered to celebrate the grand opening of Ritas & Fajitas and Jersey Joe’s Diner, two dining concepts that add variety and flair to the resort’s culinary scene.


Ritas & Fajitas
Ritas & Fajitas is a lively Mexican kitchen and tequila bar, the only one of its kind in Mesquite. The restaurant features more than 10 sizzling fajita varieties, tableside guacamole, and playful cocktails such as the Mango Bubble Margarita. With colorful décor and a festive atmosphere, it quickly became a hit with guests looking for bold flavors and a memorable dining experience.


Jersey Joe’s Diner
Just steps away, Jersey Joe’s Diner offers a retro-inspired escape open 24 hours a day. Its menu is packed with comfort-food favorites like Cheesesteak Egg Rolls, indulgent Boardwalk Waffles, and a tempting array of house-made pies and desserts. With its bright neon glow and nostalgic vibe, the diner has already become a favorite stop for both locals and travelers.
Between the two venues, there are 182 indoor seats and 28 patio seats, giving diners plenty of options whether they’re looking for lively group gatherings or casual bites at any hour.


What’s Next for CasaBlanca
The openings are part of CasaBlanca’s ongoing property enhancements designed to make it a premier road trip destination for dining and entertainment. Looking ahead, the resort plans to debut a new food hall in early 2026, featuring a mix of popular regional and national eateries. Additional concepts, including an Einstein Bros. Bagels at CasaBlanca and a Burger King at nearby Virgin River, are also in the works.
From sizzling fajitas to late-night diner classics, CasaBlanca’s latest additions expand the resort’s reputation as a place where great food and hospitality meet the scenic beauty of Mesquite.
