February is a busy and meaningful time at Zion Vineyards, where winter pruning in the vineyard coincides with bottling and releasing new wines. This season, the winery introduces a new ZIOJA Red Blend, released just in time for Valentine’s Day and now available for tasting and purchase.
Styled after a classic Rioja, the ZIOJA Red Blend is composed of 60% Tempranillo and 40% Grenache. The full-bodied wine offers bold notes of vanilla and dark fruit, with layers of cherry, plum, blueberry, tobacco, cedar, dill, and clove. A smooth, rounded mouthfeel and velvety tannins give the wine balance and depth, making it a versatile food pairing. Suggested pairings include tapas, tomato-based sauces, barbecue, grilled meats such as steaks and chops, tacos, burritos, chile relleno, and dark chocolate desserts with a hint of spice, an ideal choice for a date night.
Zion Vineyards has become known for its thoughtfully crafted blends, created through a deliberate and methodical process known as a bench trial. The process begins by determining which varietals are available and defining the intended wine style, such as a Rioja or Super Tuscan. Using measured combinations of different wines, multiple blend ratios are tested, evaluated, and discussed by a small tasting group. Notes are taken on flavor profiles, structure, and balance before a final blend is selected. Each wine reflects time, intention, and a deep respect for the vineyard and craft.
Visitors are invited to stop by the winery to taste current releases and learn more about the blending process.
