The Shop Coffee Co opened in February 2022 inside two unused mechanic bays once attached to the Sinclair garage. When Roger Goulding sold the Sinclair in 2020, those bays sat idle, filled with old equipment and junk. Co-owner and manager Kourtney Millard had always dreamed of creating a gathering place for locals—preferably with food and great coffee. After discussing her idea with a pilot friend who urged her to “buy the ticket, take the ride,” tragedy struck when he died in a plane crash a week later. Inspired by his words and memory, Millard knew it was time to take the leap.
From Garage to Community Hub
Millard approached Sinclair’s new owner, Steve Neeleman, about retrofitting the bays into a coffee shop, and he agreed. Orderville—long in need of dining options for residents and travelers on Highway 89—welcomed the transformation. The Shop sources locally roasted coffee from Deep Creek and Springdale, features fun Utah-made products, and bakes fresh pastries each morning.

Partnerships & Murals
From day one, Millard prioritized local partnerships. She hired Utah contractors to remodel the space, commissioned artists to paint vibrant murals—including a tribute to her friend’s plane soaring above Zion—and assembled a menu with help from family and friends. Today, The Shop employs more than 20 year-round staff, united by Millard’s vision of a warm “third place” for the community.

Daily Rituals & Reminders
Each morning, pastries emerge from the ovens as beans are ground and brewed. Throughout the day, locals and passersby line up for specialty lattes, drip coffee, and indulgent treats. In the shop’s upper corner, above the Zion mural, hangs the pilot’s plane—a lasting reminder that life is short, and shared moments over great food and coffee are always worth the ride.
