Tucked into the high desert landscape near Zion National Park, Black Sage offers a dining experience rooted in place, season, and intention. Located onsite at Open Sky Zion, the destination restaurant is open not only to resort guests but to the public, inviting diners to slow down and savor Southern Utah one thoughtfully prepared dish at a time.

Black Sage’s approach is firmly farm-to-table, drawing on locally sourced ingredients and bold regional flavors that reflect the surrounding landscape. Menus change seasonally and include weekly features alongside a core selection of elevated comfort dishes. The result is cuisine that feels both refined and grounded, rich and vibrant without losing its sense of place.

Guests may dine indoors in an elegant, intimate setting or step outside onto the restaurant’s expanded patio, which was reimagined in early 2025 to enhance capacity and deepen the connection to the natural environment. Panoramic views stretch across the Virgin River corridor and surrounding mesas, making the setting as memorable as the meal itself.

At the helm is Executive Chef Charles Parcell, who has led the restaurant for the past three years. Parcell’s culinary journey began at age 13 and includes experience with Marriott International, Cinque, and Cordwood. His cooking blends Italian, Appalachian, and Southwestern influences, resulting in dishes that balance technique with warmth and familiarity. Passionate about sustainability, Parcell emphasizes local sourcing, a whole-animal program, and menus that highlight the integrity of each ingredient.

Black Sage also offers a curated wine and beer list, locally sourced ciders, and a selection of mocktails, ensuring thoughtful pairings for a range of preferences. Gluten-free and vegan options are available by request.

The restaurant has earned multiple accolades, including Best Outdoor Dining and Best View in the 2025 Best of Southern Utah awards, along with recognition as a Silver Winner for Romantic Getaway. Chef Parcell was also recently honored with the Tableside Champion Award by the Greater Zion Convention & Tourism Office, celebrating culinary professionals who elevate the visitor experience beyond the plate.

Dinner is served from 5 PM to 9 PM daily, except Tuesdays. Reservations are required and can be made through OpenTable. Black Sage is located at 3405 Dalton Wash Road in Virgin. Be sure to preview the menu at StayOpenSky.com/Culinary.

Edit: Starting March 9th, Black Sage will be open seven days a week.
