At Zion Vineyards this June, the team is busy bottling, weeding and irrigating amid a season of beautiful new growth. Clusters of grapes promise high-quality fruit, and the vineyard’s health is in full display.

Many switch to white wines as temperatures rise, but the 20/20 Rule makes reds just as enjoyable in the heat. Here’s the secret: pour a small taste of red wine at room temperature to establish a baseline. Then chill the open bottle in the fridge for 20 minutes—bringing it down to about 65 °F—and taste again. You’ll notice new aromas and flavors emerge. Ideal serving temperatures are 60–65 °F for reds and 44–55 °F for whites. Because most refrigerators sit at 38–42 °F, whites often need a brief rest at room temperature to open up after you retrieve them.

Our 2023 Cabernet Sauvignon Reserve is now available. Aged for a year in a new American oak barrel, this full-bodied wine offers firm tannins and intense dark-fruit notes of blueberry and black raspberry, underscored by vanilla, oak, smoke and mocha. It’s the perfect match for steak, lamb, wild game, hard cheeses, mushrooms, truffles and dark chocolate.
