Blueberry and Tart or Sweet Cherry Sorbet
Sorbets are easy and quick to make and oh so healthy and delicious! Vary ingredients to your taste. Enjoy!
Ingredients:
1 1/2 cups frozen blueberries
1 1/2 cups frozen tart or sweet cherries
1 frozen ripe banana
1 cup vanilla soy, hemp, or almond milk (for unsweetened soy milk, add 1 tsp vanilla extract)
1/2 cup walnuts
5 pitted medjool dates
1. Blend all ingredients in a high-powered blender.
2. If there is time, soak nuts and dates in the nondairy milk (with the vanilla extract, if using) for 1 – 2 hours in the refrigerator before making. This makes the nuts and dates softer, making it easier to get that smooth ice cream texture. However, I usually just put them all together and blend, and the sorbet is great!
3. Freeze in a shallow container for 1 – 2 hours, then process in an ice cream maker according to directions. If you don’t have an ice cream maker, that’s okay: after putting the mixture into the freezer, stir it every couple hours so that it freezes evenly. It should be ready in four hours. Or, freeze in ice cube trays for a sooner “eat” time!
