The chickpea burger is a healthy and delicious alternative to the traditional Memorial Day hamburger. Serve this on a bun with your favorite condiments, or go bun free and top it with coleslaw and tomato slices. 2 cups cooked chickpeas (garbanzo beans) well drained

1/2 cup red onions finely chopped

1/2 cup finely chopped celery

1 cup oats

1/2 cup ketchup

1 T prepared mustard

2 T Braggs Liquid Aminos or salt to taste

1/2 t liquid smoke (optional)

1 1/2 t dried thyme

1/4 t pepper

1/2 cup finely chopped fresh parsley

Preheat oven to 350 degrees. Mash all ingredients together with a pastry cutter until sticky and holds together. Measure out 1/2 cup portions, form into patties, and place on a cookie sheet lined with parchment paper. Bake for 25 minutes. Flip and bake an additional 5 – 10 minutes. Serve on a bun with your favorite burger toppings.  Makes 6 – 7 patties.
