The Vegetarian Society of Utah free monthly education program for June will be on Tuesday, June 23, at 6 p.m., in the St. George Community Building on 200 West 240 North. This month, VSU is very excited to present nutrition information and a food demonstration by Health 4 Life instructor April Ashcroft, who will demonstrate how to make the following healthy summer dishes: Mediterranean Kale Salad, No-Tuna Lettuce Wraps with Sun Seed Mayo, Steamed Greens with Avocado Butter, and Summer Fruit Pie with Nut Crust. There will be samples for everyone to taste each of these delicious whole-food, plant-based dishes. She will also share the nutrition values of these foods and how important they are to healing our bodies.
Ashcroft earned her certificate in plant-based nutrition from Cornell University’s Nutrition Fundamentals online certification program. She teaches cooking classes monthly at the Kitchen Corner in St George, and in 2012, she joined the team of providers at the Bridge Health Recovery Center for those who are suffering from chronic illness and seeking health through holistic methods. She also teaches for church and civic groups and is the author of two cookbooks: “Whole Food Goodness” and “Whole Food American Favorites.” She will be giving away one or more of her books during the VSU presentation.
“One of my greatest joys is teaching others how to gain better health with plant-based nutrition,” Aschroft said. “High-nutrient plant foods, especially leafy green vegetables, have the most power to prevent and reverse disease and give you greater quality of life. In my classes, I demonstrate how to incorporate these foods into delicious meals that you will love!”
Ashcroft is also offering another Health 4 Life cooking class on Thursday, June 25, at the Kitchen Corner, located 186 N. Bluff St., where she will demonstrate Spinach Potato Salad, Lentil Sloppy Joes, Roasted Summer Squash, and Vanilla Bean Ice Cream. The class will start at 6:30 p.m. There is a $10 fee for this class, and advanced registration is required. For more information, call (435) 674-1120.
