Welcome to Utah Wine Country at Zion Vineyards
Here at Zion Vineyards, we have been making wines for more than 10 years, and the Tasting Room has been Open for Business since May of 2023. We have had guests from across the United States, Canada, France, Great Britain, Germany, Italy and Australia. Guests from around the World come to our Tasting Room and try our wines, and the response has been fantastic. Many have purchased our wines to take home and share the experience and flavors with their friends and family. This demonstrates that Utah can produce some fantastic wines.
Harvest is finished. Now is the time for our winemaker, Robert Cec, to process the wine. Since harvest and after the crush he has been carefully monitoring the must, (that’s juice the skins and the seeds) which impart colors in wine, optimizes flavor, and tannic structure. Many of our wines are fruit forward, and full bodied with complex characters and velvety tannins. These tannins cut through the intense meaty protein of a well-marbled steak, permitting subtler flavors of both wine and food to emerge.
Our newest release is our Cabernet Sauvignon Reserve. This wine combines Cabernet Sauvignon aged in two different barrels. One barrel of French Oak which adds subtle, complex flavors like cinnamon, nutmeg, clove, vanilla, and toasted bread, and chocolate. French oak is more elegant and absorbs more slowly into the wine. American Oak adds bolder notes like vanilla extract, coconut, and sweet spices. It’s often used to age powerful, robust red wines like Zinfandel, Cabernet Sauvignon, Merlot, and Petite Syrah. American oak is more assertive and absorbs more quickly into the wine. Bringing these two barrels together creates a wine that is more than just each standing alone.
The Owner and Vintner, Michael Jacksons considers this his Legacy. He has had a Love of Wine most of his life, and Zion Vineyards is a dream fulfilled. Our Winemaker Robert Cec is self-taught, and he has created some amazing and Award-Winning wines for you to enjoy. Reds with depth of character and bold style, and Whites with medium to high acidity and well-balanced fruit and citrus notes.
