Prepared by Chef Francesco DeFuria, the six-course dinner will start with sweet poached figs with ricotta cheese and honey mousse, paired with Rodney Strong Charlotte’s Home Estate Sauvignon Blanc. Guests will then enjoy a frisee salad with lemon dressing, wrapped in grilled eggplant, paired with a glass of 2013 Sonoma Coast Chardonnay.
For the third course, chocolate ravioli with shrimp and ricotta in a champagne cream sauce will be served with a 2013 Sonoma Coast Estate Pinot Noir. The fourth course will feature grilled branzino alla Tuscany with julienne vegetables in a white wine lemon sauce, paired with a 2013 Chalk Hill Estate Chardonnay.
The entree course will consist of mustard-crusted lamb chop with grilled polenta in a lamb ragu, served with a 2013 Alexander Valley Estate Cabernet Sauvignon. The meal will conclude with tiramisu topped with espresso mousse in a petite chocolate cup, paired with a 2008 True Gentleman’s Port.
