I found this recipe when looking for peanut butter uses (in small quantities). Voilà! These pancakes come out fluffy and with a delicious hint of peanut butter. I like to add at least a heaping teaspoon of cinnamon (helps with blood pressure as well as adds great flavor).  They make great gluten-free “bread” for my sandwiches, of which I keep several frozen all the time.

After trying many recipes, making several versions of each I finally came up with the “best of” that tastes like the eggnog I used to wait to drink for the Holidays – only then because it was so “unhealthy and fattening”.  Now I don’t worry about it that much knowing that there isn’t any dairy, the sugar is as natural as you can get “dates”, the spices are high in antioxidants, and using “lite” coconut milk and coconut water make this a much healthier Holiday Drink!
