Zion Vineyards Brings Elegance To Winemaking In Southern Utah

This June, Zion Vineyards is immersed in the vibrant activities of bottling wines, weeding, planting, and irrigating the vineyard. The new growth is promising, and we anticipate a harvest of high-quality fruit. The abundant grape clusters on the vines are a testament to the health of our vineyard.

We recently sold out of our 2020 Cabernet Sauvignon and 2020 Syrah, a testament to their popularity. But fret not, as we’re thrilled to introduce our exclusive 2021 vintages, crafted with utmost care and precision!

The 2021 Cabernet Sauvignon boasts a bold and complex mouthfeel with robust, firm tannins. It is full-bodied with dark fruit flavors of black currants, black cherry, tobacco, and smoke with notes of chocolate at the finish. This wine is a perfect companion to your grilling this summer, pairing well with a big, bold Ribeye Steak or a tasty New York Strip complimented with a nice reduction sauce. If you like cheese and wine, pair it with cheddar and gouda, Pecorino-style sheep’s cheese. Oh, and don’t forget about dark chocolate. Dark chocolate pairs well with full-bodied red wines, such as a Cabernet Sauvignon, which highlights its fruity and peppery notes.

The 21’ Syrah is fuller-bodied than its predecessor, bursting with flavors of dark cherry, plums, blueberry, and blackberry. It offers savory notes of cracked pepper, leather, and violets on the nose. Enjoy this wine with anything BBQ, such as brisket, ribs, or chicken. If you can get a hold of elk, venison duck, or lamb, the richness of this wine complements these dishes beautifully.

This is our first production of Albariño, a complex, light-bodied wine with bright acidity, dry with sweetness of honeydew and nectarine and lemon zest. The Albariño, is the name for the grape in Galicia, Spain. It is known as Alvarinho in Portugal. This wine pairs well with fish tacos, ceviche, oysters, mussels, and clams. Cheeses like burrata or gouda or even a salty feta with this bright zesty wine.
