The best cooked salsa recipe

Try this delicious cooked salsa recipe at your New Year’s Eve celebration. It’s sure to be a hit!

2 medium jalapeños, halved and seeded
1 Serrano chili, halved and seeded
1 large onion, quartered
1 large clove garlic
1 lb fresh roma tomatoes or 1 can no-salt tomatoes
Juice of 1 lime
1 teaspoon Real Salt or sea salt
Pepper to taste

Place peppers, onion, garlic and fresh tomatoes, in pot with 3 cups of water. Bring to boil, then reduce heat to a simmer and cook for 1/2 hour. Let cool.

Spoon out vegetables into blender jar. (If not using fresh tomatoes, add the canned at this point.) Blend until smooth. Mix in lime juice, salt and pepper to taste.

Pour into a serving bowl and add chopped avocado, onion, cilantro and fresh tomato if desired. Serve with home-baked tortillas chips.

To make your own tortillas chips, cut a stack of corn tortillas in equal size wedges. Lay on a cookie sheet and bake at 350 degrees for 12–15 minutes until they begin to get crispy. Don’t over-bake. They will continue to crisp as they cool.
